How to select

Choose firm, dry parsnips. Avoid parsnips with pits.

How to prepare

Rinse parsnips under running water, scrubbing with a vegetable brush. Trim about 3/4" off each end.

How to store

Place unwashed parsnips in an unsealed bag and refrigerate for three weeks.
