How to select

Look for chayotes without blemishes that are firm to the touch.

How to prepare

  • Chayotes are 100% edible. However, recipes often call for them to be peeled. 
  • Peel a chayote like you would a potato using a knife or vegetable peeler. 
  • Deseed the chayote by cutting it in half lengthwise and scooping out the seeds with a spoon.

How to store

Chayotes should be refrigerated in a plastic bag and can last up to one month. Be sure to rinse the chayote before each use.

  • Chayotes can be roasted, sauteed, stir-fried, grilled, stuffed, or boiled. 
  • Add chayotes to soup recipes for added variety.

  • The chayote has several other names including "custard marrow", "vegetable pear", and "mango squash." 
  • Chayote vines are used to make baskets and hats. 
  • There is a festival in New Orleans dedicated to the chayote.

Chayote has a high folate content, which promotes cell health. Chayote contains an antioxidant called myricetin, which protects against cancer, diabetes, and inflammation. The antioxidant content of chayote may reduce signs of aging.
